Yield: 2 servings

Ingredients:

  • 4 medium zucchini or a medium globe eggplant
  • Ghee, coconut oil, tallow
  • Kosher salt
  • Pepper
  • Balsamic vinegar or lemon juice
  • Chopped basil, Italian parsley, etc.

Directions:

  1. Preheated the oven to broil.
  2. Place top rack is 6 inches from the heating element.
  3. Slice vegetables ΒΌ " thick using a mandolin.
  4. Toss vegetables with oil, salt, and pepper.
  5. Spread the vegetable on the parchment lined baking sheet.
  6. Broiled for about 8-10 minutes, flipping halfway through.
  7. Drizzle the finished slices with vinegar or lemon juice or top with chopped herbs.
