Broiled Zucchini/Eggplant
Yield: 2 servings
Ingredients:
4 medium zucchini or a medium globe eggplant
Ghee, coconut oil, tallow
Kosher salt
Pepper
Balsamic vinegar or lemon juice
Chopped basil, Italian parsley, etc.
Directions:
Preheated the oven to broil.
Place top rack is 6 inches from the heating element.
Slice vegetables ΒΌ " thick using a mandolin.
Toss vegetables with oil, salt, and pepper.
Spread the vegetable on the parchment lined baking sheet.
Broiled for about 8-10 minutes, flipping halfway through.
Drizzle the finished slices with vinegar or lemon juice or top with chopped herbs.
