Broiled Zucchini/Eggplant
Yield: 2 servings
Ingredients:
- 4 medium zucchini or a medium globe eggplant
- Ghee, coconut oil, tallow
- Kosher salt
- Pepper
- Balsamic vinegar or lemon juice
- Chopped basil, Italian parsley, etc.
Directions:
- Preheated the oven to broil.
- Place top rack is 6 inches from the heating element.
- Slice vegetables ΒΌ " thick using a mandolin.
- Toss vegetables with oil, salt, and pepper.
- Spread the vegetable on the parchment lined baking sheet.
- Broiled for about 8-10 minutes, flipping halfway through.
- Drizzle the finished slices with vinegar or lemon juice or top with chopped herbs.
